Jaffrey adds to her already considerable output with a very attractive new cookbook of easily prepared, thoughtful, and unusual dishes from India, Pakistan, Bangladesh, and Sri Lanka. Anyone looking to explore Indian cooking for the first time will find this volume uniquely helpful. Jaffrey limits ingredients in most recipes to fewer than a dozen, and she restrains the range of required spices to a small handful that can generally be bought in any decently stocked supermarket. In addition to the sorts of stewed vegetable dishes typical of Indian cooking, there are meat and seafood offerings less generally recognized. Lamb shanks braise in an aromatic sauce. She even offers pork sausage patties. Cooks who don’t ordinarily consider Indian cuisine at home may be intrigued by Jaffrey’s inventory of appetizers such as spicy popcorn and perfumed almonds, which present unexpected flavors that will wow as preprandial snacks or between-meal munchies. --Mark Knoblauch

I got this cookbook mostly because I was so impressed by the recipe for fish with a green paste. It is one of the most brilliant things to do with fish fillets, ever.Since getting the cookbook, I've tried q number of the other recipes. They are all pretty workable for those of us who do not regularly cook Indian dishes, and are wonderful!I do regret that there are no panneer recipes, since I love those.Nonetheless, these are great recipes, and that fish dish is one of the best things EVER.

When we moved from a large city to a small town, we mourned the loss of foreign food restaurants. With this book, however, we don't have to go without any more! These recipes are tasty and very easy, and it made us feel like we were back in our favorite Indian restaurant again. The best feature of this book is that she uses easy-to-find ingredients in the states, which I appreciate since the closest foreign market is over an hour away from where we live. If you want to try some delicious, easy, and authentic-tasting dishes, I highly recommend this book!

I have some books from Madhur Jaffrey. I like them all. This one is no exception. Here, she really shares some of her home recipes. She managed to simplify some traditional recipes, saving you a lot of time or cutting down the fat amount by using alternative cooking methods. She also provides recipes for products not so commonly used in India like quinoa or broccoli.I just regret the absence of indicative preparing time in her recipes.

I just wanted to mention that this book is the American edition of British book Curry Easy, and Vegetarian India is the American edition of Curry Easy Vegetarian. I love this book and strongly recommend it!

I have other cookbooks by Madhur Jaffrey but this is my favorite. And one of my very favorite cookbooks. She has simplified her recipes and made them easier for American audiences to cook. I use the cookbook about once a week and have given it as a gift to friends on several occasions. The recipes are delicious and easy to cook, provided you have all the ingredients, especially the spices, but that is simply a matter of planning ahead. I would not hesitate to recommend her cookbook to anyone who loves Indian cuisine, as I do. And my guests love her recipes as well, or my cooked versions of them.

The "Goan Style Dal Curry" has become a staple in my kitchen. It is fantastically flavorful with lots of cilantro and tomato. My 10-month-old son grandson loves it: he opens his mouth like a little bird to ask for more! I make it in large batches and freeze the extra portions.

I'm a student who wants home cooked meals, but I don't have access to well stocked Indian grocery stores. This book is perfect- it teaches you to cook with easily available American vegetables like zucchini and butternut squash. The recipes and techniques are un-fussy; I've tried several and they've all turned out delicious. Highly recommended!

A gift for a friend, who has enjoyed it very much. She has never cooked Indian food before or worked with any of the spices, so it was a little intimidating to her at first, but her family said the dishes she has made from this book have been fabulous. If giving as a gift to someone who has never cooked Indian food before, I would recommend also gifting some of the most often used spices in this book to make it a little less scary.

I have turned to Ms. Jaffrey's books ever since I took up the art of Indian Cooking, 30 years ago. This book shows you how to get the magic from your pots to the table. And you can rely on this book to serve up mouth watering, nose-tingling dishes...and we all know home cooked beats ANYTHING you can order outside!
